▶Objectives
We aimed to contribute to vocational training, adult learning, and the business catering sector by creating new digital tools in education with Zero Waste outcomes. These educational tools sholud provide enhanced learning in Zero waste subjects and at the same time create and improve business models towards Zero waste principles. Creating the 'CaterinLAb' application, 'CateringLab' e guide, and 'CaterinLab' video guide we will raise knowledge and awareness for many students, restaurant managers, farmers, and end-users to work and to live by Zero Waste principles. Innovative Zero Waste CateringLab application should enable the connection of local producers, restaurants, and catering products consumers.
▶Activities
In our project we implemented: : 1. Zero Waste catering Lab application /site - creation and management of a platform/website to connect catering businesses, local farmers and responsible customers - Leading partner Galileo; 2. Creation of a Zero Waste Catering Lab – e-guide - for training students and chefs to prepare a meal according to circular food economy by eliminating waste, supporting local farmers, using Zero waste delivery; creating jobs and ensuring that people have access to healthy, local food - Leading partner 'Slava Raškaj' 3. Creation of a Zero waste video guide database - it will contain the video recipes and video clips of the Zero-waste kitchen management process - Leading partner Poster (HR) B) 4 Partners project meetings to be held in: - Croatia, Zagreb; - Italy, Rome; - Belgium, Brugge; - Slovenia, Celje. C) 4 multiplier events to be held in Italy, Croatia, Slovenia and Belgium D) 3 LTTs in Italy, Belgium and Croatia E) Dissemination activities F) Project management activities
▶Impact
The digital tool Zero Waste Catering Lab is solving the problem of networking and it s bring together local producers, farmers, and restaurants, connects them all with the end-user through the web application. Through the same application, the end consumer of food can order a meal that is prepared in a zero waste way and delivered with the lowest carbon footprint, ensuring that its action has a positive impact on the environment. Students of two VET catering schools had the opportunity to learn how to use the application, through LTT activities and through the Catering guide, and their knowledge is also improved through Catering Lab video guide, containing visual and practical instructions for all interested chefs, students, entrepreneurs on how to achieve zero waste food delivery processes.
