The goal is to enhance understanding of ancient grains from multiple perspectives: utilization and processing technique, significance in terms of biodiversity and cultural heritage, marketing potential and nutritional value.This effort is specifically directed towards professionals and students in the VET sectors overall with a particular emphasis on the culinary field. Furthermore there is a focus on disseminating awareness regarding the benefits of ancient grains in addressing climate change
